Grilled Turkey and Marinated Beet Salad

Ingredients

¾ cup Roasted red beets, peeled and diced 1in.
¾ cup Roasted golden beets, peeled and diced 1in.
¼ cup Torn basil
¾ cup Spring mix
2 tbsp. Walnuts, broken
1 ½ oz. Lemon and Red Wine Vinaigrette
3 tbsp. Feta cheese
1 ea. Bias-cut slice of French bread, brushed with olive oil and grilled on both sides
1 ea. Grilled Turkey Chop, cut into strips

Directions

  1. Combine all ingredients (except feta, grilled turkey and French bread) in a stainless steel mixing bowl.
  2. Toss and coat well with Lemon and Red Wine Vinaigrette.
  3. Place into a chilled salad bowl.
  4. Sprinkle feta over the top of the salad.
  5. Arrange the grilled turkey onto the salad.
  6. Garnish with the grilled bread.
