2026 Flavor Trends Part II: "Swicy" and "Swavory" Flavors

There’s good news for operators in the 2026 flavor trend outlook: Increased interest in sweet-spicy, aka “swicy,” and sweet-savory, aka “swavory,” means more menu possibilities—often without needing extra SKUs. Read on to find out which ingredients hit the right notes for each, and how other restaurants are layering flavors to create unique items.
Swicy
After over a year of popularity, the sweet-spicy combination remains in demand and likely isn’t going anywhere. Datassential found that nearly 10% of restaurant menus featured sweet and spicy items in 2024, up almost 2% from the year before. The flavor combo works especially well for limited-time offers. Burger King embraced this opportunity with its Fiery Strawberry & Sprite, as did Starbucks with Spicy Lemonade Refreshers. Shake Shack even launched a limited-time “swicy” menu.
While it might be a novelty for U.S. consumers, the sweet-spicy flavor profile is a mainstay in many global cuisines. And since younger generations are accustomed to and interested in global flavors, especially higher spice levels, the trend is expected to grow. Sauces, condiments and marinades like Korean gochujang, Thai sweet chili sauce, Mexican chili-mango and Filipino banana ketchup have long been favorites. Ingredients like sambal, harissa and chamoy pair well with sweeteners like honey for broad taste appeal and menu possibilities. This Korean BBQ Turkey Steak Sandwich marries gochujang with honey or maple for a bold glaze. In this Turkey Rogan Josh, a take on a popular Indian dish, a slightly sweet braise offsets a spice mixture spiked with chili powder.
Swavory
Consumer interest in more complex savory profiles is also showing up on menus. “Swavory” flavors rely on recognizable ingredients used in unexpected ways, blending comfort with adventure. Global cuisine, especially East Asian fare, is known to play with the umami effect, often with fermented ingredients such as miso and soy sauce. Again, these flavors appeal to the younger generations who are familiar with and craving these culinary influences in their meals.
Culinary experts are expecting combinations of fruit, honey, maple or brown sugar with savory flavors and items to get even more popular through 2027. These Turkey Lettuce Wraps are a perfect example, balancing the savory elements of turkey, garlic, tamarind and sesame oil with brown sugar and honey. Tropical flavors come together in this Turkey Loco Moco, featuring a Hawaiian brown gravy with ketchup, Worcestershire, soy sauce and sugar. Operators can participate in this trend easily with simple flavor additions to make their menus stand out—with minimal labor impact. This strategy is especially ideal for speed-scratch kitchens and multi-daypart menus.
These flavor trends invite operators to get playful and creative with their menu updates by simply adding a touch of sweetness to spicy and savory items.
