Steamer: Thaw turkey thigh roast under refrigeration 2-3 days in advance Place unopened turkey thigh roast in a hotel pan in steamer Steam for 20–25 minutes. Critical Control Point: Heat to an internal temperature of 165°F for 15 seconds. Transfer to 4” steam table pan, cover with foil, and place in hot holding cabinet to rest for 15-25 minutes. Critical Control Point: Hold hot at 135°F or above until service. Shred turkey as desired for serving application. Convection Oven: Thaw turkey thigh roast under refrigeration 2-3 days in advance Preheat oven to 350°F. Cut thawed turkey roast into 2”x2” pieces Place cut turkey roast pieces in a hotel pan with broth from the bag; cover tightly with foil Bake for 25–35 minutes. Critical Control Point: Heat to an internal temperature of 165°F for 15 seconds. Transfer to 4” steam table pan, cover with foil, and place in hot holding cabinet to rest for 15-25 minutes. Critical Control Point: Hold hot at 135°F or above until service. Shred turkey as desired for serving application.
