Turkey Thigh Tartine

Toss shredded turkey thigh roast in a creamy dressing with apples, dried figs and roasted pine nuts. Serve on a slice of toasted whole wheat bread with a schmear of citrusy, smashed avocado.

Lite mayonnaise

¼ tsp.

Paprika

¼ tsp.

Salt

½ tsp.

Lemon juice

½ tsp.

Dried thyme

¼ tsp.

Black pepper

2 tbsp.

Apples, diced

2 tbsp.

Black Mission figs, diced

Directions

  1. 1. Combine all ingredients except the turkey in a small bowl and whisk to combine.
  2. 2. Add the turkey and gently fold to combine.

Large avocado

½ tsp.

Lemon juice

½ tsp.

Salt

¼ tsp.

Black pepper

Directions

  1. 1. Remove the avocado from the skin and transfer to a bowl.
  2. 2. Smash with a fork to the desired consistency.
  3. 3. Season with the remaining ingredients.

  1. 1. Toast a slice of whole grain bread, then spread the smashed avocado across it. Top the avocado with the turkey salad. Garnish with rainbow microgreens and a lemon wheel. Serve immediately.
