Serve up a deli-inspired favorite with shredded turkey thigh roast, tangy sauerkraut and melty Swiss on toasted whole-grain bread. For a simple build, it adds big flavor and plenty of protein to lunchtime.

  1. Thaw turkey thigh roast under refrigeration 2 days in advance.
  2. Preheat oven to 350° Fahrenheit.
  3. Remove the outer cooking bag from the turkey and empty entire contents of package, including all liquid, into a baking pan.
  4. Separate thawed roast by hand into approximately 2"x2" pieces and distribute evenly throughout the pan.
  5. Cover tightly with foil and bake for one hour or until roast reaches an internal temperature of at least 145° Fahrenheit.
  6. Remove from the oven and shred the meat into bite-sized pieces. Set aside.
  7. Increase oven to 375° Fahrenheit.
  8. Spray a sheet pan with pan spray.
  9. Lay one piece of bread onto sheet pan.
  10. Top with 2 oz of shredded turkey, 2 Tbsp sauerkraut and 1 oz of cheese.
  11. Top with remaining slice of bread.
  12. Spray tops of sandwiches with pan spray.
  13. Place a sheet pan on top of sandwiches and bake at 375° Fahrenheit for 8-10 minutes until bread is toasted, cheese is melted and it reaches a minimum internal temperature of 160° Fahrenheit.
  14. Serving: Arrange the sandwich on a tray, plate or boat. Hold in warmer at 140° Fahrenheit until service.
