small apples, sliced (Use an apple like Honey Crisp, Pink Lady, or Granny Smith)

1 cup(s)

orange juice or apple juice

2 tbsp.

maple syrup

¼ cup(s)

dried cranberries, cherries, or raisins

1-2 tsp.

lemon juice

Directions

  1. 1. In a large cast-iron or other ovenproof skillet, cook sausages over medium-high heat, turning occasionally, about 2 to 3 minutes, until heated through.
  2. 2. Add one tablespoon butter to the skillet and stir until melted. Add the apples and cook until slightly browned. About 1 to 2 minutes.
  3. 3. Add the orange juice, maple syrup, and cranberries. Simmer over medium heat for 5 to 7 minutes or until fruits and are tender and syrup has slightly thickened. (If apples are cooked and the sauce still needs to thicken, remove apples, and keep warm while reducing the sauce to desired consistency)
  4. 4. Add the lemon juice. Orange juice sauce will need less lemon than the apple juice sauce.
  5. 5. Turn off the heat and swirl in the remaining tablespoon of butter.
  6. 6. Place a waffle on a plate and top with sausage and apples. Drizzle with pan syrup.

Directions

  1. 1. Preheat waffle iron to medium high heat.
  2. 2. In a large bowl, sift together flour, salt, baking powder and sugar.
  3. 3. In a separate bowl, whisk the eggs, the milk, melted butter and vanilla.
  4. 4. Add the milk mixture to the flour mixture until combined.
  5. 5. Spoon the batter into the waffle iron.
  6. 6. Cook the waffles until golden and crisp, about 3 to 5 minutes
