heirloom cherry tomatoes, halved


artisan whole-wheat bread, toasted


  1. 1. Heat sausage in a skillet until browned and heated through. Slice in half lengthwise and set aside until ready to assemble.
  2. 2. Bring a medium pot of water to a full rolling boil. Gently lower your eggs into the boiling water.
  3. 3. Keep water at a full boil for 7 minutes and 30 seconds.
  4. 4. Meanwhile, fill a medium bowl with cold water and several ice cubes.
  5. 5. When the time is up, remove the eggs from the boiling water and lower directly into the ice bath. Submerge for 3 minutes. Peel and slice into quarters.
  6. 6. In a medium bowl, mash the avocado with lime juice and salt.
  7. To assemble.

  8. 7. Smear the toast with the mashed avocado. Top with cherry tomatoes, sausage links, and 2 quarters of the jammy hard-boiled egg.
