  3. 3. Place a slice of Swiss cheese on the patty and cook for 1 minute until the cheese is melted and the center of the patty is hot.
  4. 4. Toast the Brioche bun on a griddle or in a toaster oven.

Ingredients

Caramelized Onion Goat Cheese

2 cup(s)

Sweet yellow onion, diced

1 tsp.

Fresh thyme leaves

8 oz.

Soft goat cheese

1 tbsp.

Canola oil

1 tsp.

Salt

Directions

  1. 1. Combine canola oil, sliced yellow onion and salt in a heavy bottom skillet and cook over low heat until the onions are soft, caramelized and sweet.
  2. 2. Stir often to prevent burning. Remove from the pan and set aside to cool.
  3. 3. In a stand mixer, combine the chopped fresh thyme leaves to softened goat cheese and whip with the paddle attachment for 1 minute on medium speed.
  4. 4. Add the cooled caramelized onions, then season with salt.
  5. 5. Set this aside at room temperature while you make the rest of the ingredients.

Ingredients

Tart Cherry Jam

14 oz.

Tart cherries

1 ½ tbsp.

Sugar

2 cup(s)

Lemon juice

as needed

Pectin

Directions

  1. 1. Combine the sugar and pectin in a bowl and whisk to combine.
  2. 2. Toss the frozen cherries in the sugar mixture and place in a colander over a bowl to capture the liquid.
  3. 3. Combine the liquid released from the cherries and the lemon juice in a saucepan and place over medium heat.
  4. 4. Once the liquid is warm, add the thawed cherries and bring to a rolling boil.
  5. 5. Set aside to cool completely.
  6. Note:

  7. 1. For chunkier jam use a wooden spoon to stir the mixture while heating it to avoid crushing the cherries. For a smoother jam, this can be blended with an immersion blender after it’s cooked.
  8. To serve:

  9. 1. Smear 1 tbsp of the compound goat cheese on the inside of the bottom and top halves of a brioche bun, then place the hot turkey patty on top. Place a dollop of the cherry jam on top of the burger patty. Top with arugula and/or jalapeños, if desired. Place the top half of the toasted bun on top to finish the sandwich.
