    Chimichurri

  1. In a large bowl, combine all ingredients and mix until well combined.
  2. Store in the fridge below 41° Fahrenheit until meal service.

  4. Prepare chimichurri according to instructions.
  5. In a bowl, combine Greek yogurt and chimichurri.
  6. Stir until well combined.
  7. Store in the fridge below 41° Fahrenheit.
  8. Serve cold.
  9. Chimichurri Chickpea Croutons

  1. Preheat oven to 400° Fahrenheit.
  2. After rinsing and draining chickpeas, dry with paper towels to remove excess water.
  3. Line a sheet pan with parchment and spread dry chickpeas in a single layer.
  4. Dry roast chickpeas for 20 minutes, stir halfway through. Chickpeas will start to crack and turn a golden color as they roast.
  5. Continue to dry roast for an additional 20 minutes, stir halfway through.
  6. Pour chimichurri over hot chickpeas and stir until chickpeas are thoroughly coated.
  7. Return the pan to the oven and roast for 4-7 minutes, stirring halfway through.
  8. In a large mixing bowl, combine garlic powder, onion powder, black pepper, paprika and salt to make a dry seasoning mix.
  9. Once chickpeas are roasted, toss bowl filled with dry seasoning mix.
  10. Store in fridge below 41° Fahrenheit until meal service.
  11. Chimichurri Turkey Salad

  1. Prepare chimichurri chickpea croutons and creamy chimichurri yogurt dressing according to the recipe.
  2. Wash produce.
  3. Chimichurri Turkey Salad Assembly

  1. In a 3-compartment to-go container, add 2 cups of mixed salad greens in the largest compartment.
  2. Top mixed salad greens with sliced turkey breast, tomatoes, broccoli microgreens, pepitas, green onion and chimichurri chickpea croutons.
  3. Pour creamy chimichurri yogurt dressing into a container with a lid and place in a 3-compartment container.
  4. Hold cold for service, below 41 ° Fahrenheit.
  5. Serve cold.
  6. Serving: Serve chimichurri turkey salad as an entrée salad or a grab and go salad with a ¼ cup of creamy chimichurri yogurt dressing and a 2 oz. eq. grain like a whole grain dinner roll.
