Turkey & Mozzarella Genovese

Ingredients

 

TURKEY & MOZZARELLA GENOVESE

Yield: 2 sandwiches 

2 slices

Rustic organic seeded wheat bread

3 tbsp.

Pesto Genovese (basil)

6 slices

Fresh mozzarella, sliced ¼-inch thick

6 slices

Roma tomatoes, sliced widthwise ¼-inch thick

6 leaves

Fresh basil, large

1 tbsp.

Extra virgin olive oil

Directions

 

TO PREPARE THE TURKEY & MOZZARELLA GENOVESE:

1. Spread 1 ½ tablespoons of pesto over each slice of bread.  

2. Place 3 slices of fresh mozzarella over each slice of bread with pesto.

3. Place 3 slices of Roma tomato over the mozzarella for each sandwich.

4. Place 3 large basil leaves over the tomatoes.

5. Fluff 1 ½ ounces of the oil browned turkey and place over the basil leaves of each sandwich.

6. Drizzle ½ tablespoon of olive oil over each sandwich.

7. Serve.
