Pasta salad is easy to customize and very versatile—offer this as a grab ‘n go item, side or snack. Also consider increasing portion size to serve as a one-bowl meal.

Ingredients

 

GREEN GODDESS DRESSING

Yield: 2 cups 

16 oz.

Mayonnaise

1 oz.

Watercress leaves

½ oz.

Tarragon leaves

½ oz.

Parsley leaves

½ oz.

Chives, coarsely chopped

3 tbsp.

Freshly squeezed lemon juice

½ tsp.

Smoked salt

¼ tsp.

Urfa pepper

¼-⅓ cup

Water

 

GREEN GODDESS PASTA SALAD

Yield: 5 lbs. 

12 oz.

Gemelli, cooked, drained and rinsed until cool

1 lb.

Asparagus, cut into ½-inch pieces, blanched and chilled

8 oz.

Haricots verts, cut into ½-inch pieces, blanched and chilled

1 ea.

Large Granny Smith apple, finely diced

2 cups

Green Goddess dressing

½ cup

Toasted pine nuts

Directions

 

TO PREPARE THE GREEN GODDESS DRESSING:

1. Put all ingredients except water into blender.

2. Blend until very smooth, adding water if needed to adjust texture.

 

 

 

 

 

 

 

 

 

TO PREPARE THE GREEN GODDESS SALAD:

1. In a large bowl, toss together all ingredients except pine nuts.

2. Plate and garnish with a sprinkling of nuts.
