These lettuce wraps are a delicious option for health-conscious diners and Asian flavor lovers alike. Serve them as a sharable starter, or pair with an Asian quinoa salad for a hearty lunch or dinner offering.
Banh Mi Turkey Wraps


1 1/2 lb. Ground turkey
12-14 Lettuce cups
*Marinade for ground turkey
1 1/4 tsp. Cornstarch
1 tbsp. Mirin (rice wine)
2 tsp. Water
1 tbsp. Soy sauce
1 tsp. Vegetable oil or peanut oil
*Marinated vegetables
1 cup Carrots, julienned
2 ea. Jalapeños, sliced into thin rings
1/4 cup Cilantro leaves
1/4 cup Green onions, chopped
Dash Hot sauce
1 cup English cucumber (kirby), julienne
2 tbsp. Rice vinegar
Dash Salt
*Stir-fry sauce
3 tbsp. Vegetable oil or peanut oil
1 1/2 tbsp. Hoisin sauce
1 1/2 tbsp. Soy sauce
1 1/2 tbsp. Mirin (rice wine)
3 tbsp. Oyster sauce
2 tsp. Light sesame oil
1 1/2 tsp. Sugar
2 1/2 tbsp. Cornstarch
2 tbsp. Vegetable oil or peanut oil
1 tbsp. Minced ginger
1 tbsp. Minced garlic
2/3 cup Minced green onions
1 1/2 cups Minced water chestnuts


  1. Combine the marinade ingredients in a mixing bowl and blend well. Fold in and blend well with the ground turkey—marinate for 15 minutes.
  2. Combine all ingredients for marinated vegetables in a stainless steel bowl and toss together. Drain before serving.
  3. Combine all the ingredients for the stir-fry sauce in a small stainless steel bowl and set aside.
  4. Heat a wok or heavy skillet over medium-high heat—add the oil then the marinated turkey and stir-fry for 3–4 minutes or until internal temperature of 165°F is reached. Remove and set aside.
  5. Clean the wok or skillet with a cloth then heat over medium-high heat. For the filling, add 2 tbsp. of oil then add the ginger, garlic and onions. Stir-fry for 1 minute then add the water chestnuts and stir-fry for an additional minute.
  6. Add the cooked turkey and stir-fry sauce and cook until thickened. Pour into a serving bowl. Fill each lettuce cup with a spoonful of turkey filling and top with a tbsp. of the drained marinated vegetables. Serve.
