Turkey Caesar Salad for Two


2 ea.
1 ea. Garlic clove, minced
2 ea. Anchovy filets, minced
To taste Fresh milled black pepper
1/2 tsp. Dry mustard
1 ½ tsp. Worcestershire sauce
2 oz. Fresh lemon juice
1 head Romaine lettuce, cut into 1 ½ in. by 1 ½ in. pieces
1/3 cup Extra virgin olive oil
1/2 cup Shaved or shredded Parmesan cheese
3/4 cup Freshly made croutons
2 ea. Hot poached eggs


  1. Prepare the dressing: combine the garlic, anchovies, black pepper and dry mustard; smash together and blend well in the bottom of the salad bowl. Add the worcestershire and lemon juice; blend well.
  2. Add the romaine and toss to blend well. Drizzle with olive oil and blend well.
  3. Place into two salad bowls.
  4. Sprinkle each salad with the Parmesan cheese and croutons.
  5. Top with the sliced Turkey Breast Filet (one per salad).
  6. Place a poached egg on top of the sliced turkey.
  7. Serve.
