3 tbsp. Oregano leaves, chopped
10 oz. Grape tomatoes, cut in half
2 tsp. Minced garlic
3 oz. Red onions, sliced thin
4 oz. Greek feta cheese, crumbled
4 oz. Kalamata olives, cut in half
5 oz. Olive oil
2 1/2 tbsp. Red wine vinegar
To taste Salt and black pepper
5 oz. Arugula


  1. Combine all ingredients and toss. Do not over mix.
