Smoked Turkey Benedict San Antonio


1 ea. 10-inch flour tortilla
¾ cup Shredded Jack & Cheddar cheese
3 oz. Smoked turkey, cut julienne, ¼
2 oz. Grilled julienne peppers & onions
2 oz. Eggs, scrambled
3 ea. Thin slices of avocado
1/3 cup Roasted corn & black bean salsa


  1. Place the flour tortilla on a clean cutting board or work surface.
  2. Spread the cheese over ½ of the tortilla.
  3. Arrange the smoked turkey and grilled veggies over the cheese.
  4. Grill the quesadilla on a lightly oiled grill or heavy-duty sauté pan until golden brown on both sides and cheese is melted.
  5. While the quesadilla is browning, scramble the eggs.
  6. Cut the quesadilla into 3 triangular pieces and shingle them into center of the plate.
  7. Top the quesadilla with scrambled eggs.
  8. Shingle and place the slices against the scrambled eggs.
  9. Top with roasted corn & black bean salsa.
  10. Serve.
