Pavo En Recado Negro


6 cups Turkey, cooked, shredded
9 cups Turkey broth
60 g Recado Negro*
1 ea. Green bell pepper, large dice
1 ea. Red bell pepper, large dice
2 ea. Eggs, hardboiled, sliced
As needed Tortillas

*Recado Negro

2 lb. Ancho chile, deveined, seeded
1 cup Tequila
4 ea. Allspice, toasted
2 ea. Whole cloves, toasted
1/4 tsp. Cumin seeds, toasted
1 tbsp. Black peppercorns, toasted
1 1/2 tbsp. Annatto seeds, soaked in white vinegar or bitter orange
1 ea. Garlic head, peeled
1 tbsp. Dried oregano
To taste Salt

Recipe Yields: 6 servings


  1. Simmer turkey with broth and Recado Negro for 30 minutes. Add diced bell peppers at end of simmering.
  2. Serve 6 to 7 ounces of turkey with 2 slices of hard-boiled egg and tortillas.

*Recado Negro

  1. Soak chiles in tequila, then toast them until dark. Grind with remaining ingredients in a metate or a food processor to a fine paste consistency. Reserve.
