Jerk Turkey Omelet with Sautéed Apples

Jerk Turkey Omelet with Sautéed Apples

*Sautéed apples

6 ea. Apples, Granny Smith
1/3 cup Soft butter
1/3 cup Brown sugar
1/8 tsp. Sea salt
2 tbsp. Fresh lemon juice

To Prepare:

  1. Peel, core and slice the apples 1/8 inch thick.
  2. In a heavy-duty sauté pan over medium heat, melt the butter and stir in the brown sugar, salt and lemon juice.
  3. Add the apples and coat them with the brown sugar/butter mixture.
  4. Sauté the apples until tender—do not overcook.
  5. Serve warm.


1 tbsp. Oil
3 oz. Butterball Turkey Medallions
½ tsp. Jerk seasoning
¼ cup Green and red peppers, 1/4 in. diced
3 ea. Fresh eggs
¼ cup Shredded Swiss cheese
1 tsp. Sliced green onions
½ cup Sautéed apples*


  1. Heat the oil in an 8-inch sauté pan over medium heat, then add the turkey, Jerk seasoning and peppers. Sauté until hot and browned slightly.
  2. Prepare a Swiss cheese-stuffed omelet. Arrange onto a plate, then top the omelet with the Jerk sautéed turkey and peppers. Garnish with thinly sliced green onions.
  3. Arrange a portion of the sautéed apples next to the omelet and serve.
