Grilled Turkey Filet with Red Wine Vinegar & Oregano


4 ea. Turkey filet


4 ea. Garlic cloves, minced
1/2 tsp. Black pepper, fresh ground
1/4 tsp. Crushed red pepper
1/2 tsp. Salt, kosher
2 tsp. Dried oregano leaves
1 oz. Olive oil
1 tsp. Whole grain mustard
1 tsp. Sugar
6 oz. Red wine vinegar
1 oz. Balsamic vinegar
1 oz. Fresh lemon juice


  1. Prepare marinade by combining all ingredients in a stainless steel bowl. Blend well.
  2. Brush marinade onto both sides of turkey filets.
  3. Place turkey filets on a pre-heated charbroiler or flat grill.
    • Cook turkey until golden brown.
    • Turn and continue to cook to an internal temperature of 165°F.
    • Baste the turkey filets 2–3 times during cooking process.
  4. Serve the turkey filets on a plate or platter with accompaniments (great with grilled vegetables).
  5. Serve immediately.
