Turkey Goes German

As the popularity of fermented foods continues to rise, German food is making a comeback in U.S. foodservice. From pretzel bread to house-made sausage and schnitzel, German-inspired foods can add a touch of authenticity to your menu. Express your culinary creativity with turkey as you explore these trends influenced by the cuisines of Deutschland:

  • Fermented vegetables and krauts: Sauerkraut can be made with a variety of vegetables and ingredients, plus it fits nicely within the pickling trend that’s currently taking off on restaurant menus. It makes a delicious side dish or sandwich topping. Try it on a grilled turkey frank for starters.
  • Pretzels: Pretzel bread on menus has increased by more than 10% in the past two years. Try a pretzel roll topped with a grilled turkey slider, whole grain mustard, sauerkraut and Muenster cheese for a tasty German-themed appetizer.
  • Schnitzel: Traditionally, this dish is a veal cutlet dipped in egg and breadcrumbs and then pan-fried. Put a twist on this classic by using a turkey breast filet instead. Serve with a side of braised cabbage and caraway buttermilk potatoes for an entrée right out of the Rhineland.
  • Beer: Add a touch of Oktoberfest to your menu by suggesting turkey burger and beer pairings.
